Yesterday's Lunch Menu: Cauliflower Fried Rice
I steamed a head of cauliflower the night before and using a potato masher, I mashed it until the pieces resembled grains of rice. I used it for a recipe the first night, but had plenty left over.
What I used:
2-3 T coconut oil
1 giant clove of Dad's elephant garlic, chopped
1/2 inch of fresh ginger root, minced
a handful or so of broccoli florets
some leftover meat, chopped up into bite size pieces (I had pork & steak)
steamed cauliflower, mashed into rice sized pieces
What I did:
Heated the coconut oil in the wok, and then stir fried the garlic & ginger. Added the broccoli and stir fried for a couple of minutes, then added the (already cooked) meat and the cauliflower. Cooked until heated thoroughly & then served. Easy to throw together and quite tasty!
